Audrey’s High Five


Welcome to Audrey’s High Five, my new weekly series where I share five things I loved about the past week. It might be a product, a recipe, a memory, or something totally random — but always helpful…just like me!

1. The Comfiest Leggings Ever

I have these leggings in the capri and longer version, and they’ve held up through every season — including pregnancy. These things are SO comfy.

2. My Cheese Soup

Missouri has been in a heat wave, but we finally got a cool, rainy day last week — and I took full advantage by making my favorite comfort meal: cheese soup.

I’m not a strict recipe follower, but I tried to measure this one out just for you. The secret? Caramelizing the diced onion in butter. Even if you’re not an onion person (I’m not!), it gives the soup so much flavor!

CHEESE SOUP RECIPE

Ingredients

  • 1/4 thinly diced onion
  • 1 Tbsp butter
  • 1 cup frozen veggies (I like broccoli or carrot/broccoli mix)
  • 1 cup cooked pasta or diced potatoes
  • 1.5 cup chicken broth
  • 1 cup milk
  • 6-8 oz. Velveeta
  • Salt, pepper and a pinch of sugar to taste

Directions

  1. Sauté onions in butter until caramelized. (use a pot you can fit everything in)
  2. Add veggies; once thawed, add chicken broth and your starch (potatoes or pasta).
  3. Add milk and Velveeta; cook until melted and creamy.
  4. Season to taste and enjoy!

3. My Prayer Journal

I just filled up my last prayer journal, so it’s time to crack open a new one. I divide mine into three sections:

  • Front: Notes that I take during sermons at church
  • Middle: Personal time with God — prayer, reflection, working through whatever I’m dealing with. (This is my biggest section)
  • Back: My prayer list

If you’ve ever thought, I want to spend time with God but don’t know what to say, try writing. Once I jot down a topic I’m struggling with, the words just flow.

l’ve had a lot of people ask for a link to this journal. I get them at Target (in the journal aisle). Unfortunately, they don’t show them on the website for me to link it, but hopefully you can find it at your local Target!


4. My Mini Menu Binder

This is a new system for me, and I’m obsessed. I’ve seen the big menu binders, but I didn’t want a bulky book taking up space in my kitchen. So I thought about those little A6 size binders — and it’s perfect!

Here’s how it works:

  • Write down your family’s favorite meals
  • Categorize them (I do mine by protein type)
  • Each week, choose meals from your lists
  • I shop my pantry first, then pick meals based on what I already have

5. Baskets

I’m a basket case, loud and proud! HA! There’s basically no problem a basket can’t solve.

They’re so essential for hiding visual clutter, all while being aesthetically pleasing! I have them in so many different shapes and sizes.
